During his first season as a Bobcat, STU went 6-2 with a 3.93 ERA in 17-appearances, recording 49-strikeouts... Coipel was named Sun Conference Pitcher of the Week... in the 2019 NAIA World Series semi-final game, Coipel pitched eight innings, allowing two runs against No. 2 University of Science & Arts (OK.) to send St. Thomas to the second National Championship game in program history. In 2019 Coipel went 6-2 with a 3.93 ERA... In the NAIA World Series, Coipel led No.6 St. Thomas to the second National Championship appearance in school history; by pitching 8 innings and allowing just 2 runs against No.2 Science & Arts... (2020) appeared in three games for St. Thomas University before the season was canceled due to COVID-19, accumulating 13-innings pitched with a 3.46 ERA and ten strikeouts.
